Quinoa patties - Vegan
No meat, no daily, no egg, vegan Quinoa patties recipe.
Ingredients for 8 patties :
- 20cl (200ml / 6.7 oz) uncooked Quinoa
- same quantity of water to cook quinoa,
- small dices of mix vegetables of your choice, small quantity of each for example onion, carrot, parsley, zucchini, celery, bell pepper, leek...)
- 3 tbsp of vegetable cream (soy, oat, spelt etc.)
- 5 tsp of cornstarch,
- 1/2 tsp of salt
- vegetable oil (olive oil, sunflower, colza, safflower, peanut oil etc)
- pepper (freshly grounded black pepper is nice).
Preparation :
1) Cook quinoa in the same volume (+ a little bit more is better) of water.
You can prepar this the day before or can use the rest of cooked quinoa for example.
2) Stir fry vegetable dices in a pan with a small quantity of vegetable oil (except parsley or other herbs).
3) mix the cooked vegetables & quinoa in a bowl, add other ingredients and mix well.
4) wet hand and make 8 flat balls,
5) cook both side in a pan with small quantity of vegetable oil.
Once cooked, you can keep it in your fridge for 3, 4 days and with the rest, I made this wraps with Falafel seasoning.
Quinoa patties cutted into two (or you can make small ball if you would like to prepar wraps), avocado, lettuce, hummus (ground checkpeas & sesame seeds paste seasoning with olive oil + lemon juice).
You can also add other vegetables like fried (or steamed) aubergine, onion slices, cucumber, tomatoes etc.
Also, you can add in the patty dough some curry spices to change sometimes or just ground cumin.
Or replace parsely by fresh basil, mint, coriander leaves etc.
And also you can use these patties (smaller balls) like meat balls, gently cook in the curry sauce.
